A must try: Chocolate Peanut Butter Cupcakes

I know I haven’t been too regularly over the past year with blogging, but I wanted to share this awesome recipe with you all!! These were INCREDIBLE!!! Very rich and very delicious.  Enjoy 🙂 Let me know how they turn out!

Ingredients for cupcakes:

– 1 package chocolate cake mix
– 1 1/4 cups water
– 1/3 cup canola oil
– 1/2 cup peanut butter
– 3 eggs
– 24 miniature peanut butter cups

Ingredients for frosting:

– 6 ounces of semisweet chocolate, chopped (I just chopped up chocolate chips)
– 2/3 cup heavy whipping cream
– 1/3 cup peanut butter
– Additional miniature peanut butter cups, chopped


1. In a large bowl, combine the cake mix, water, peanut butter, oil, and eggs, beat on low speed for 30 seconds.  Beat on medium for 2 min or until smooth.

2. Fill paper-lined muffin cups 1/2 way.  Place a peanut butter cup in the center of each cupcake.  Cover each with 1 tablespoonful batter.

3. Back at 350 degrees for 18-22 minutes or until toothpick is inserted near the center corners out clean.  Cool for 10 minutes before remove from pan to wire racks to cool completely.

4. Place chopped chocolate in a small bowl.  In a small saucepan ring cream just to a boil.  Pour cream over chocolate; whisk until smooth.  Stir in peanut butter.  Cool, stirring occasionally, to room temperature or until ganache reaches a spreading consistency, about 10 minutes.
** (Mine was really runny, so I had to stick in it in the fridge for about 15-20 min!)

5. Spread over cupcakes, immediately sprinkle with additional peanut butter cups.  Let stand, until set!

** Best not to use reduced-fat or generic brands of peanut better!

Christmas Cheer

I don’t usually talk about things that are too personal on my blog, but for some reason today I feel the need to let it out.  I know that it’s the holiday season and I should be feeling all happy and cheery, but I’m not. At least today I am not.  There’s some family “drama” (I guess that’s what I would call it) happening and things around home just aren’t the same this Christmas season. Unfortunately there’s not much I can do about it, but I think it would help if I could just bounce out of my funk and put on a happy face for the fam.

I think I was doing alright until today, when I found out that my bestest has been upset with me for three weeks, and she just now decided to share that with me. Although she told me she’s upset with me, she also mentioned that she wouldn’t be ready to discuss it for a few days.  Then why did she tell me now?  Why didn’t she tell me three weeks ago, or better yet why didn’t she just wait to tell me until she was ready to discuss?  I am now waiting patiently….  I love her to death and of course I know that this will not ruin a friendship of 22 years, but I am anxious and ready to talk everything out.

If you put the family and friend issues together, you get me in a funky mood.  I know that it will all blow over, it’s just a matter of time and patience…and Christmas cheer!!

Yes, my all time favorite Christmas song is,  All I Want for Christmas by Mariah Carey.  How could anyone not love this song?  On our road trip to NJ, I made Mina listen to the song many, many times.  Not only did he listen to it…he also sang to it! Put our voices together and we do a pretty good Mariah, if I may say so myself.  Do me a favor and go listen to it, right now:

3. Reality T.V., unfortunately.

4. Midnight “snacking” – Often resulting in meal four of the day.

5.  Online shopping – aka lusting over things I can’t have.

6. McDonald’s french fries

7. Vegging out on the couch for hours at a time

8. Chick flicks

9. FB stalking

10. Dessert after every meal, it’s a requirement.

Happy Anniversary!!!

This week Mina and I celebrated our one year anniversary! It’s crazy to think that I have been married to the man of my dreams for exactly ONE year now! I feel like I just met him last week and here we are nearly four years later. So insane how time flies by.

I’m not sure why people say the first year is the hardest, sure we struggled financially, but besides that I could not have asked for a better first year.  A lot of changes have taken place and we’ve learned a lot, but I wouldn’t change it for anything else in the world!

Chocolate Chocolate Chip Cookies

5 -star recipe!!!  These cookies turned out so so delicious I just had to share the recipe! 🙂 Enjoy!


  • 2 1/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 sticks butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs, beaten
  • 1 tablespoon vanilla
  • 1/2 cup unsweetened cocoa
  • 2 cups chocolate chips, 2 Hershey’s chocolate bars chopped or M&M’S
  • 1 cup chopped walnuts (optional)


Preheat oven to 375 degrees. In a bowl stir together flour, salt, and baking soda. In another large bowl stir together butter, both sugars, eggs, vanilla and cocoa. Gradually stir flour mixture into butter mixture and mix until combined. Stir chocolate chips and walnuts, if using, and stir to distribute evenly.

For cookies: Drop dough by tablespoonfuls onto greased baking sheets and bake about 10 minutes. Cool on a baking rack.

For bars: Pat dough into a greased 9 inch square baking pan and bake 20 to 25 minutes. Cut into squares when cooled

The Second Love of My Life!

"I'm wet and cold.  I never want a bath again!"

"I'm wet and cold. I'm never taking a bath again!!"

Meet Diesel!! Diesel is seriously the greatest dog in the world.  Although at moments I consider him to be a pain in the ass, whether it be from him actually biting my ass or just because he is being annoying, I LOVE him.  We rescued him in November and at the time he was only 10 weeks old and could fit on my lap, mind you now he is only 4 months old and weights about 35 lbs.  He thinks he’s a small dog though; whenever I sit on the floor he comes and sits on my lap and refuses to move.  He loves to cuddle and play! Oh man, we play fetch for hours a day and I am not exaggerating.  I remember when we first got him I told Mina (my husband) that I hope he likes to play fetch, and now I kind of regret saying that because I now hate the game of fetch.

I think that everyone should have a a dog.  I know that there are a lot of cat lovers out there (sorry Sarah) but cats don’t show as much emotion as dogs.  I love when Diesel gets all excited and wags his tall and runs in circles, makes me smile.  When I walk into the house he runs up to me and knocks me down and shows that he is excited that I’m home.  What does a cat do?  Nothing!! Maybe a cat will walk past you and meow or rub up against your leg, but really where is the barking and the wagging of the tail and the outward excitement of seeing you?  Nonexistent in a cat!

So, going back to why Diesel is the best dog in the world:

1. When i’m sick he lays by my bed the entire time

2. He is SO smart, he was house trained in 2 weeks!! AND he learned to sit within 3 days.  Currently, we are working on the “speak” command, but that’s taking a little longer.  (I tell Mina to “speak” (aka bark) and then I tell Diesel to “speak” in hopes of him following what Mina did and so far it’s not working).

3. He makes me laugh – whenever he is super hyper he starts chasing his tail or he runs, runs, runs and hits a wall, I can’t help but to laugh!

4. Look at that face – how could you not LOVE him?

I know it’s only been a few months, but if anything ever happened to Diesel I would be totally sad and  heart-broken.
